Not so long ago, small dairy farms were the backbone of agricultural communities all over America. Today, the skills that are required to keep a "milk cow" are endangered-- but there are many reasons to keep the family cow a part of the "farm of the future", including increasing interest in local, sustainable, and humanely produced food.
